Plant-Based and Gluten-Free Sri Lankan Curry


Try this warming, fragrant and uplifting Sri Lankan blend of spices in this delicate butternut squash and coconut curry. 1 large sweet potato
1⁄2 butternut squash
3 tablespoons coconut oil
1⁄2 teaspoon ground turmeric
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon chili powder
1 teaspoon medium curry powder
2 red peppers
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
1 large red onion
3 garlic cloves
2 green chilies
1 tin of coconut milk
1 tablespoon coconut sugar or maple syrup
juice of 1⁄2 lime
100g baby spinach
