Easy Gluten-Free & Healthy Vegan Tacos


Who doesn’t love a healthy dose of mashed avocado? These vegan tacos by Maddie Lymburner are full of fresh flavors, featuring fresh tomato salsa and bright green guacamole. It is an easy vegan recipe you can whip up on a weeknight.


4 small fresh tomatoes (diced and drained of juice)
1/2 of a red onion
small bunch of coriander (finely chopped)
juice of 1/2 a lime
1/2 tsp salt & pepper each

Base or “Ground Beef”:
250g organic firm tofu
250g mushrooms (finely chopped)
1 can of rinsed brown lentils
+ taco seasoning

Taco Seasoning:
1 tbsp chili powder
1/2 tsp garlic powder
1/4 tsp chili flakes (omit if you don’t like spice)
1/2 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp cumin
1 tsp each salt & pepper

1 large avocado (mashed)
juice of 1/2 a lime

Hemp/Garlic Sauce:
1 cup hemp seeds
juice of 1 lemon
1 clove of garlic
5-6 tbsp of plant-based milk
1/2 tsp each salt & pepper
