These undeniably simple hummus recipes by The Happy Pear are just what your plant-based snack needs. ⅓ of the basic hummus, rich in flavor and truly delicious, is turned into a roasted carrot hummus while another ⅓ into a pink sweet beetroot and olive oil hummus.
Basic Hummus Ingredients:
6 cloves of garlic (peel)
3 x 400g tins of chickpeas (drain and rinse well)
150ml lemon juice (juice of 3 lemons)
6 tablespoons light tahini
3 teaspoons salt
a pinch of freshly ground black pepper
½ tsp pinch of ground cumin
9 tablespoons water

3 medium carrots (approx 250g)
1 medium raw beetroot (175g)
4 tablespoons of olive oil
