One bite, and you’ll fall in love with this nutritious avocado flatbread. Totally delicious and a healthy substitute for refined flour flatbread, this recipe by Food Impromptu is vegan and super easy to make.
1-1/2 cup mashed avocados
1 – 2 cloves of garlic (minced)
Juice of 1/2 lime OR lemon
1/2 cup cilantro OR parsley (finely chopped)
Salt to taste
2 cups whole wheat flour OR flour of your choice
1/4 cup Olive Oil (to brush on the flat breads) OR Butter
Mash avocado. Add the minced garlic, lemon juice, chopped cilantro and salt to taste. Mix well.
Add the almond flour. Mix well and knead for 2 – 3 minutes. Cover and let it rest for 10 mins.
After resting the dough, cut it into equal size pieces. Roll each piece into little balls.
Place the dough ball between two sheets of parchment paper and then roll it with a rolling pin. To make a round shape.
Heat a non-stick pan OR cast iron pan on medium high heat.
Lay the flatbread on the heated pan very gently.
Cook for 1 -2 minutes on one side. Flip it gently and cook for another 1 – 2 minutes.
Remove from the pan and serve. You may brush the bread with some olive oil if you like.
